I am a coffee addict. I've tried to quit in the past, but it always comes back to me and when I take that sip I've been craving, all the coffee love comes rushing back to me.I started drinking coffee when I was about 15. Before school, I would get a medium iced caramel swirl coffee with extra cream and extra sugar. I kicked that habit quickly once my young self was introduced to the concept of calories... Looking back, I no longer diet or count calories, but I am amazed at how much sugar I was consuming at 7am before homeroom.
I have since discovered that I am lactose-intolerant (the extra cream always made me sick, but I didn't care because it was so sweet and creamy) and my blood sugar is super unstable, so I function best when I don't eat a lot of it. My new go-to order now, seven years later, is a black iced coffee with coconut milk and stevia. I suppose my taste buds have "grown up..." though if a friend gets a sweet creamy coffee and I have a sip, I can easily see how I could get addicted to that caramel-swirliness once again.
In high school, I used coffee to wake myself up and focus better in class. It was the same in early college. Now that I'm writing a thesis and mostly working on my own time, it's the ritual aspect of coffee that I love the most. I'm trying to use it less as a drug, just to get out of bed, and more as a treat/way to motivate myself and heighten my focus. My Mint app (budget manager, thank god for it) told me I was spending a ridiculous amount of money on coffee shops this year, because I usually go to them to write. I love writing in a public space, so I didn't want to give that up, but I did want to perfect an at-home recipe that I could drink before I went or take in a travel mug. I've since created the perfect drink for me.
When I'm craving iced (I drink iced coffee year round because I'm a psycho from Massachusetts), I use the Trader Joe's cold brew concentrate with a little bit of water and a good amount of coconut milk, and one packet of stevia. This coffee is light, refreshing, not filling at all, and gives me a great energy boost. I also get the crisp, almost tangy-yet-still-smooth taste from the cold brew, which I love. When I wake up anxious or stressed and want something warm and grounding, I'll make my bulletproof coffee recipe. It has a good amount of fat and protein, so I usually use it as a breakfast. I'm never hungry in the mornings anyway. This coffee is great if you eat a keto diet. I personally don't, but I do try to eat a lot of fat because it makes me feel full and nourished, and I am sugar-free to help heal my hormone imbalance.
Sometimes I will make this exact recipe except with a cup of matcha, I usually do that for an afternoon pick-me-up. That's what's pictured in this post.
Here's my recipe for bulletproof coffee:
- 1 cup of your favorite coffee (again, you could also use matcha.) I love standard drip coffee, and I usually buy different kinds of beans at Trader Joe's because I love experimenting with new roasts and flavors. Sometimes I'll use my boyfriend's moka pot (I got it for him) to make a darker brew that tastes European and bold. It takes a little longer and only makes one cup, but it's worth it.
- 1 tablespoon of ghee. Ghee is clarified butter, and it's chock-full of healthy fats. Ghee is the reason this coffee makes me feel so full. It also really helps lubricate the digestive system, so combined with the coffee, this recipe always ~makes me have to go~ in the morning... which I appreciate.
- 2 drops of liquid stevia. You can use sugar, agave, honey, or whatever you like. I stick to stevia and monkfruit since, like I said, my blood sugar is wacky, especially in the morning.
- 1 tsp cinnamon or cocoa powder (or even creamy unsweetened peanut butter... just trust me on this one), depending on the day. If you're into flavor syrups made with sugar or artificial sweetener, those work too.
- A generous splash of coconut milk or coconut cream. Again, fatty, nourishing, healthy, delicious.
- A pinch of Himalayan pink salt. I feel like this mitigates the super-sweet stevia, and enhances the flavor of the cocoa or cinnamon I added. Just a pinch!
- 1 scoop of unflavored collagen protein powder. You could use a chocolate or vanilla flavored protein powder if you're tryna be fancy.
Basically, I just pour all the ingredients (make sure the coffee is HOT, otherwise the ghee won't emulsify and it'll just sit on the top) into my big Pyrex cup measure (I like to use a big container so my immersion blender doesn't make a mess) and then use my immersion blender to mix it alllll up. Then I pour it from the Pyrex cup measure into a mug and drink up. Feel full, nourished, energized and ready to take on the day. I usually don't need to eat for at least a few hours after this concoction.
Drink this coffee before you put your lipstick on, because all the fats in it will basically act as a makeup remover! ;)
