YUM: The Recipe Series: An Anti-Inflammatory and Protein-Packed Vegan Stir-Fry

Today I'm sharing a recipe I came up with when I was honestly just trying to get rid of my leftover vegetables. You can really customize it to your taste, because I didn't use any measurements, just handfuls! ;) 
Chickpeas and tofu are packed with protein, spinach is awesome for beating bloat, and garlic is a powerful anti-inflammatory. 

Ingredients:

  • 1 handful of sliced carrots
  • 1 handful of tofu
  • 3 or 4 handfuls of spinach (or more, it wilts a lot as it cooks so use your judgement.)
  • 1 handful of chickpeas
  • a clove of garlic
  • tamari to taste
  • sesame oil to fry it in
  • salt and pepper to taste
  • cherry tomatoes, sliced
  • onions
Heat up the sesame oil, gradually add the ingredients (put the carrots in first and the spinach in last, other than that order doesn't matter) and sprinkle in your seasoning as you go! Take it out of the pain and you've got yourself some gut-healing goodness that doesn't even taste vegan. ;)
